Senugapappu Karam
Ingredients
- 1/2 cup Dry coconut flakes
- 1 cup Roasted bengal gram
- 5 Red chilli
- 5 tsp Cumin seeds
- 5 flakes Garlic
- a few Curry leaves
- walnut size Tamarind
- as desired Salt
Directions For Cooking
- Heat oil in pan add cumin seeds and garlic when done keep aside. Dry roast red chillies and curry leaves.
- Grind roasted bengal gram with roasted red chilli, curry leaves, cumin seeds, garlic, salt, tamarind coarsely. Add coconut and salt and process for another minute.
- Serve with hot rice and a drizzle of ghee.
Idli chilli powder
Ingredients
- 1/2 cup Black gram
- 20 Red chillies
- 1 tsp Coriander seeds
- 1 tsp Bengal gram dhal
- small size Tamarind
- 1 1/2 tsp Salt
Directions For Cooking
- Heat one spoon of oil and fry all the ingredients till golden brown. When cool down pound with salt and tamraind.
- Preserve in clean air tight container.
Sambhar
Ingredients
- 1/2 Cup Bengal Gram Dal (Bengal Dal)
- 1/2 Cup Black Gram Dal (Urad Dal)
- 1/2 Cup Red Gram Dal (Thuar Dal)
- 1/2 Cup Dry Coconut
- 10 Red Chillies
- 2 Table Spoons Cumin Seeds
- 2 Table Spoons Fenugreek Seeds (Meethi)
- 1 Cup Coriander Seeds
- 2 Table Spoons Curry Leaves
- 1 Table Spoon Black Pepper
- 3 Table Spoons Garlic Flakes
- 1/4 Tea Spoon Turmeric
- 1/4 Tea Spoon Salt
Directions For Cooking
- Roast all the ingredients in a little oil.
- Let it cool.
- Grind them in a spice grinder or coffee grinder.
- Store in airtight container.
Rasam
Ingredients
- 1/2 Cup Black Gram Dal (Urad Dal)
- 1 Tea Spoon Cumin Seeds
- 1 Tea Spoon Coriander Seeds
- 1 Tea Spoon Black Pepper
- Curry Leaves
- Cloves
- 2 Cardamoms
- 1 Stick Cinnamon
Directions For Cooking
- Roast all the ingredients in a little oil.
- Let it cool.
- Grind them in a spice grinder or coffee grinder.
- Store in airtight container.
Idli Powder
Ingredients
- 1/2 Cup Black Gram Dal (Urad Dal)
- 1 Table Spoon Cumin Seeds
- 3 Table Spoon Bengal Gram Dal (Channa Dal)
- 1/4 Cup Coriander Seeds
- 1/8 Cup Dry Coconut (Optional)
- 5 Red Chillies
- A Lime Sized Tamarind
- 5 Garlic Pods Or Garlic Salt (2 Table Spoons)
Directions For Cooking
- Roast all the ingredients in a little oil.
- Let it cool.
- Grind them in a spice grinder or coffee grinder.
- Store in airtight container.
Garam Masala
Ingredients
- 1 Cinnamon Sticks
- 1 Tea Spoon Cumin Seeds
- 1 Tea Spoon Coriander Seeds
- 1 Tea Spoon Cloves
- 1 Tea Spoon Black Pepper
- 3-4 Cardmoms
- 1 Big Bay Leaf
- 1 Tea Spoon Papprika
- 1 Tea Spoon Mace
- 1 Tea Spoon Nutmeg
- 1 Tea Spoon Dry Ginger
- 1 Tea Spoon Caraway Seeds
Directions For Cooking
- Roast all the ingredients in a little oil.
- Let it cool.
- Grind them in a spice grinder or coffee grinder.
- Store in airtight container.
Dal Mix
Ingredients
- 1/2 Cup Gram Dal(Tuar)
- 1/2 Cup Bengal Gram Dal
- 1/2 Cup Black Gram Dal
- 1/2 Cup Green Gram Dal
- 1/2 Table Spoon Tamarind
- 25 Red Chillies
- 6 Flakes Garlic
- As Desired Salt
Directions For Cooking
- Roast each dal seperately without adding oil till brown in color.
- Heat oil in a heavy bottomed vessel fry the red chillies and gralic.
- Powder everything finely after it cools down completely.
Curry Masala
Ingredients
- 3 Cups Red Chillies
- 1/8 Cup Fenugreek Seeds
- 1/8 Cup Pepper
- 1/4 Cup Cumin Seeds
- 1/4 Cup Mustard
- 1/4 Cup Corriander Seeds
- 1 Cup Red Garam Dal
- As desired Salt
- A Little Dry Ginger
- 1/2 Cup Curry Leaves
- Orange Sized Tamarind
- 1 Cup Garlic
Directions For Cooking
- Roast tamarind and salt without adding oil .
- Heat oil in a heavy bottomed vessel fry all the other spices.
- Powder everything finely after it cools down completely add garlic, tamarind and salt at the end.
Curry Powder/Masala
Curry powder is a combination of different spices used to enrich the favors of the vegetables. When using this ensure not add any additional spices or salt.
